Ha! Do I have your attention now? Since I am doing a week of St. Patrick’s Day ideas, I thought I would throw this one in. I promise you can’t taste the spinach!
We went to Costco last week and BlendTec, which is an awesome blender, had a display and the pitchman was making this Spinach Ice Cream. We were all skeptical, but I knew that I secretly put all sorts of veggies in my smoothies and no one knew…..so I wondered if this could work as well?
YEP! Besides being bright green (and perfect for Thursday) you cannot tell there is any spinach in it. If you have a super picky eater just tell them you added food coloring or the leprechauns got it or come up with your own tall tale! I promise….you can’t taste. My family happily gobbled it down at the store and then requested a batch of it the next day at home! I actually felt good about letting them eat it right before supper!
Spinach Ice Cream
3/4 cup half & half (I used fat free)
1/4 cup agave nectar
2/3 cup nonfat powdered milk (the guy used a vanilla protien powder)
2 cups spinach, lightly packed
1 1/2 tbls vanilla
2 1/2 -3 cups of ice
Combine all ingredients in your blender. Replace lid. Blend on med-high for about 20-30 seconds and high for an additional 20-30 seconds, until smooth.
Note: We ate it right away, but putting it in the freezer in a freezer-safe container for about 5 hours really helped it set up and gave it a more firm consistency.

I made my own version of spinach ice cream today. I based it off of a Ben an dJerry’s recipe believe it or not. I covered up the greaan with cocoa powder. If is a light chocolate flavor.
2 pasteurized eggs (easy to do…Google it)
1/4 cup sugar
1/4 cup xylitol (great for teeth and bones and tastes great)
25-30 drops of stevita (plain)
1 cup whole milk
1-2 cups spinach
3 Tablespoons cocoa
1 teaspoon vanilla
2 cups cream
Whisk eggs until fluffed up and add sugar, xylitol, and stevita…keep blending for a few minutes. Put spinach in a Vitamix (or Bendtec) with the milk and cocoa and blend until smooth..no traces of spinach
Mix the milk, cream and vanilla with the egg mixture and freeze in a ice cream maker. It will be like softserve. Just put in a covered container in the freezer for a few hours to harden. 🙂

Wow! I love this idea!!! I’ve been on a smoothie kick lately, but haven’t been brave enough to add more than the already obvious smoothie flavors. But the color of this is soooo pretty and refreshing! I might have to try this soon!

Add some mint and chocolate chips and no one would guess that it’s got spinach in it! I found a really healthy recipe for spinach mint chocolate chip icecream here http://chocolatecoveredkatie.com/2011/03/13/spinach-ice-cream/ , that doesn’t have any cream in it! It’s a spin-off of banana soft serve, if you’ve ever heard of or tried that.
