Ham and Macaroni Casserole
This ham and mac casserole has been a family favorite for about 20 years. I make it any chance I get and it makes a TON!
Unfortunately, I can’t remember where the recipe came from originally…my guess is a magazine or newspaper clipping. Anyway, like I mentioned it makes a ton so, I tend to split the recipe into 2 9×9 pans. I cook one and freeze the other!
Recipe for Leftover Ham
I love this recipe for using up leftover ham…whether it’s Christmas, Easter, or just a big Sunday supper. I don’t know about y’all, but I’m always trying to find creative ways to use up leftovers besides just having the same meal over and over again. I turn leftover ham into sandwiches, soups, and this totally scrumptious Ham and Macaroni Casserole. I also love Love LOVE this Breakfast Ham Casserole that uses up leftover ham too.
Of course, you don’t have to wait until you have leftovers to make these recipes. I’ve been known to buy a ham steak and cut it up….or if I need a really quick meal, I buy the pre-cut diced ham. It all works!
Ham and Macaroni Casserole
A twist on traditional macaroni and cheese, this Ham and Macaroni Casserole is an easy casserole and is a great use for leftover ham.
Ingredients
- 1 pound ham, cubed
- 1 large onion, diced
- 1 pound elbow macaroni
- 8 ounces cheddar cheese, shredded
- 1 cup sour cream
- 10 3/4 oz cream of chicken soup (1 can)
- 1/4 cup butter, melted
- 1 cup bread crumbs
Instructions
- Heat oven to 400 F.
- On stovetop, bring 4 qts of water to a boil. Add onion and macaroni; cook for 8 minutes or until al dente, stirring occasionally.
- Drain and return to pot. Add ham, cheese, sour cream, and soup. Pour into a 13x9x2 inch baking dish. Sprinkle with bread crumbs and pour melted butter on top.
- Bake at 400 F for 30 minutes or until heated and golden. Let stand 5 minutes before serving.

Cobbled it together tonight with what I had. My substitutions: organic gemelli instead of macaroni, leftover Easter ham, frozen chopped onion (there’s like 20 of them in there; apparently I haven’t been cooking enough lately and I’m freezing them faster than I’m using them!), plain yogurt instead of sour cream (no one noticed), and left out the bread crumbs (they’d expired in 2008… oops). Turned out great! Family asked for second helpings, and 3 yr old is having a third bowl before bed. Served with broccolette/broccolini and a green salad. Thanks W!
