Easy Homemade Tomato Sauce

I love being able to take fresh produce and transforming it into something that can be saved and used later. While I love canning, I don’t have a pressure canner so I have to freeze my tomato sauce. I use the sauce for spaghetti, soup, pizza, etc. The picture is the sauce being used for spaghetti and meatballs. I didn’t think y’all would appreciate a picture of a bunch of ziptop baggies.

 

Easy Homemade Tomato Sauce

5lbs fresh tomatoes
1 large onion, chopped
1 cup shredded peeled carrots
1 tbls chopped parsley
2 tsp sugar
1 1/2 tsp salt
dash of pepper

Wash and core tomatoes. Combine all the ingredients in large pot. Slowly bring everything to a boil, stirring frequently. Reduce heat to low and simmer for about 30 minutes or until it thickens, whichever comes first. Remove from heat and when cool enough to handle, measure about 3 cups into a blender; cover and blend on high for 1 minute. Pour into freezer zip top baggies. (Note: I pre-measure mine to be about what I normally use when making certain recipes.)

When ready to use, put frozen sauce in a saucepan on medium heat. Stir frequently and bring to a boil slowly to prevent scorching. If you don’t need it to be hot right away (like in a casserole), you could defrost it in the microwave or the fridge, then add to the recipe. Add whatever seasonings you would normally add for your favorite recipes.

    I am trying this. I have been doing almost everything from scratch, but I still buy jarred tomato sauce. 🙁
