One of my kids favorite snacks is a fruit smoothie. Little do they know that it is actually a fruit and veggie smoothie. Both of my kids are picky eaters, especially my 6yo daughter who refuses anything green or any other veggies. So I resort to sneaking the veggies into their smoothies. They can’t taste it, but I know they are getting at least a serving or two of veggies in every glass.
Veggies that are easily hidden in fruit smoothies are:
spinach
kale
chard
cabbage (red or green)
romaine
carrots
beets (and the tops too)
Feel free to use what you have on hand and play around with different veggie/fruit combos. Warning: celery has a peppery flavor and is not good to hide and iceberg lettuce has no real nutrition, so don’t use it.
Fruit (& Veggie) Smoothies
3 cups strawberries (include the tops, they are good for you)
2 big handfuls of spinach
1-2 carrots (no need to peel, just wash well)
1 cup of orange juice
1-2 cups of ice
Put everything in the blender and blend on high for 1-2 minutes until everything is blended well. *If the berries aren’t ripe enough, feel free to add a bit of honey or agave nectar to sweeten it up.
Yield: 4 8oz servings

A very useful list of veggies that can be hidden in smoothies. I added a banana when I made this to give it that little bit of extra sweetness. The kids loved it. Thanks 🙂

I found this recipe to not be very good – verrrry acidic with the strawberries AND the orange juice, and I even tried using less orange juice than recommended. Maybe just try using one or the other? I think I will stick to blueberries and bananas when it comes to veggie smoothies.

Oh no! I’m sorry you didn’t like it. I’ve found that if the berries aren’t sweet enough or if I use certain brands of OJ that it can be a bit tart or acidic. I just add a tbls of honey or agave to help when it’s like that.

actually those are alkaline fruits…if you do your research , once they get to the digestive system , it is very basic 🙂

If you are worried Sadie….start with just one carrot and work your way up. The texture is really thick and cold. Not quite as thick as a milkshake, but thicker than blended coffee. You will probably need a straw. 😉

I have a vita-mix. Try blending for longer or do it in stages. Add the oj and veggies….blend. Add the fruit….blend. Then add the ice…blend. Maybe I should do a post about blenders!

I love smoothies! I usually just start throwing things in the blender in the morning. It usually works out:-) Spinach, blueberries and banana are my staples.

Yum! I will have to try this. My daughter LOVES fruit but is a little picky with veggies. She eats green beans and always wants to try broccoli but never ends up actually eating it after tasting it. I love the hiding veggies ideas. I need to try this one!
