When the weather starts to cool off and pumpkin stands pop up all over, then I know it’s time to dig out this family favorite recipe. I love to make my own pumpkin puree and pumpkin butter from scratch and then we roast up all those yummy pumpkin seeds. There are never enough for in one pumpkin for us. However, I always make a huge batch of this overnight Pumpkin Pie Oatmeal in the slow cooker.
It’s so easy to throw together right before bed and then wake up to the house smelling like you’ve been baking a pumpkin pie all night long. The good news is this has way less calories than the pie, but the taste will totally fake you out! AMAZING, I tell you…just AMAZING!
My kids and I are sweet oatmeal fans so I tend to add more brown sugar than most, but it makes it even that much better. If you don’t normally eat sweet oatmeal, then leave out the brown sugar or add just a couple tablespoons. You can always add more before serving. I also top mine with nuts, but I was thinking next time I’m going to try dried cranberries. I think that would just be divine!
I throw this together often on Friday or Saturday nights so that when we have a busy morning with soccer games or church we still get a good hearty breakfast without a lot of fuss!

Pumpkin Pie Overnight Oatmeal
This pumpkin pie overnight oatmeal is made in a slow cooker so it's the perfect ready-to-eat fall breakfast idea.
Ingredients
- 1 1/2 cups steel cut oats
- 4 1/2 cups water (depending on if you like thicker or thinner oatmeal)
- 1 cup canned pumpkin puree
- 2 tsps pure vanilla extract
- 2 tsps pumpkin pie spice
- 1/4- 1/2 cup brown sugar
Instructions
- Combine all ingredients in slow cooker and cook on low for 6-8 hours. Stirring occasionally if you can.
- Season to taste with salt and/or more brown sugar.

This looks good. I really am surprised pumpkin isnt utilized more throughout the year. I mean we all think of it in the fall, but it is really good for you and always so flavorful . I would love to try this, and will!

I have no idea Mary. I don’t count my calories so it’s not something I’ve ever figured out. I know there are places on line that you can add in ingredients and it will tell you. w-

Hi Leigh! Regular rolled oats or quick oats will cook really fast in the slow cooker instead of overnight. So you’d need to adjust the time. OR…just cook your normal oats on the stove top but add the pumpkin pie flavors while your normal cooking. 🙂

Haven’t a clue what I did wrong, but it came out like soup….just awful….with clumps of all sizes.
I did follow the recipe exactly. My slow cooker cooks on the hot side, so it really should have dried out!
I did manage to salvage some of it, but found it on the bland side.
Something tells me y’all used pumpkin pie filling instead of plain canned pumpkin?

I didn’t have that type of oats. Only old fashioned oats. Hope it works. I have everything together right now but not sure if I should cover? Pics look like it isn’t covered?!?

That did not work for me at alllllll with old fashioned oats. It was like gelatin, lol. I made it on the stove this morning though, and it was delish. I sub the water for milk though, on the stove. We like it better that way.

I have never done overnight oatmeal in the slow cooker but I do a version in the fridge all the time. I wonder if I could do this basic recipe that way. It sounds so good I’m definitely going to try it one way or another!

I’ll give it a try and let you know. (In case you’re wondering, to do my overnight oatmeal I bring the liquid to a boil in a pot, add a touch of salt and some brown sugar and then the oats (even long-cooking steel cut oats work). Then I take it off the heat, cover it and put it in the fridge. Warm portions in the microwave in the morning.

Christine, I’m wondering how the other food in the frig doesn’t spoil from a drastically reduced frig temperature from adding such hot pot of oatmeal! When we did our first child’s grad party & was cooking 80# of ground beef in portions, it lowered the frig temp too much. Thanks for sharing this as we need gluten-free oatmeal and I’ve not seen GF steel cut oats before. We love the price of Trader Joe’s GF regular oatmeal bag and am eager to add the organic Pumpkin Puree for overnight oatmeal!
