Usually every weekend, Hubbyman makes a big breakfast for us. He loves doing it (and I love that he loves to do it). We usually have pancakes or hashbrowns with either bacon or sausage. Well, this past weekend, Hubbyman was out hunting, so I was on my own for the big weekend breakfast. I needed something the kids would love and something that was fairly quick and easy. Enter my new favorite breakfast…Sausage Pancake Muffins!
Jimmy Dean is our go-to for breakfast sausage! We’ve been eating it for years, so I was super excited to be asked to participate in their recipe contest using their new Jimmy Dean Crumbles! The crumbles come in three flavors: original, turkey, and spicy.
Since it was just me and the kids this weekend, I opted for the original pork sausage crumbles! They tasted just like I had cooked up a fresh batch of sausage…but there was less clean up and since they were pre-cooked it took less time to assemble the muffins.
Seriously, y’all! These sausage pancake muffins couldn’t get much easier. Okay…well, perhaps if you use a box pancake mix which you totally could do {I won’t tell anyone if you do}. I happened to make mine gluten, dairy, and egg free…but you don’t have to go super crazy like that if you don’t need to. If you need a great pancake recipe, give this one a try…it has a regular and gf version!
I love how the muffins turned out with a distinct layer of sausage in the middle of my gluten free pancakes, but you could certainly mix them in if you prefer. It all works!!!

Sausage Pancake Muffins
These sausage pancake muffins make a delicious grab and go breakfast sandwich. This easy breakfast recipe starts with homemade pancake mix, or you can use store-bought.
Ingredients
- 1 pancake recipe that makes about 14 pancakes, prepared but not cooked
- 1 package Jimmy Dean Original Sausage Crumbles
- maple syrup
Instructions
- Preheat oven to 350F. Spray muffin pan with non-stick cooking spray and set aside.
- Prepare pancake recipe according to recipe or package instructions. Spoon a dollop of batter into the bottom of each muffin tin, spread to cover the bottom of each tin.
- Top with 1-2 tbsp of sausage crumbles. Spoon another dollop or two of pancake batter on the top, making sure the sausage is all covered with batter. (Note: If using gluten free batter, you will need to spread it out with a couple spoons so that it covers nicely.)
- Bake at 350F for 10-15 minutes or until pancakes are done. Remove from oven and let cool for 5 minutes. Carefully remove from pan and drizzle with warm maple syrup to serve.
