Green chile guacamole is made with Hatch green chiles, ripe avocados, and delicious spices. The perfect spicy guacamole!
If you live in the southwest, then you probably look forward to Hatch Chile Season. If you don’t live in the region, then you are totally missing out. Restaurants and stores all over get their hands on fresh chiles from Hatch, NM and then roast them in their parking lots. The smell is intoxicating. We usually buy a couple pounds and freeze them and one of our favorite things to make is green chile guacamole. You might remember that I’ve only been a guacamole fan for a couple years and now I’m pretty much a guacamole snob.
The only thing that is better than the fresh roasted chiles I can find here a few weeks a year is directly ordering my chiles from The Hatch Chile Store. I’m so excited to be partnering with them this week for #15MinuteSuppers. There chiles are picked, processed, roasted, chopped, and frozen within hours of picking! That’s even better than what we get here once a year.
You can order fresh or frozen and they will be shipped to you. The frozen ones showed up in a cooler with dry ice. I posted the picture on Instagram when they came in the mail. {You do follow me on Instagram, right?} That 2.5lb bag of whole chiles is HUGE! Green Chile Guacamole
Ingredients
- 2 ripe CA avocados
- 1/2 cup chopped, roasted Hatch Green Chiles
- 1/4 small red onion, finely diced
- 2 large cloves garlic, finely minced
- 1 1/2 tsps chopped fresh cilantro
- 1/2 medium roma tomato, seeded and diced
- 1/2 tsp coarse sea salt
- fresh lime juice (~2tbls or 1/2 a lime)
Instructions
- Cut avocados in half, remove pit, and spoon avocado into a mixing bowl. Smash avocado until it reaches your desired consistency, a little chunky is best. Add in remaining ingredients and gently stir to combine.
- Taste and adjust salt as needed.
- Note: To store left over guacamole place the pit in the guacamole to help it stay fresher longer.

the Chile’s roasting. I like chopped and use whole on steak and hamburgers. I just like tasting the whole Chile. Once you have tried these you will use them on everything. Off to get my order in today.
