All the flavors of apple pie turned into a yummy frozen treat with these Apple Pie Ice Cream Sandwiches!
Is there anything more American than apple pie? Probably not…my family can never seem to get enough apple pie. We seriously have it at every single holiday gathering. Even though it’s summer time, I thought the kids would love an apple pie treat, but with temps over 110F I refuse to turn on my oven very long. So I came up with these apple pie ice cream sandwiches. {Keep Reading to the Very End for a Giveaway}
The crust only cooks for like 10 minutes so the house doesn’t get too hot with the oven on. I prepped everything at night and then assembled the sandwiches at breakfast so that we’d have a fun after lunch snack one day. The best part {for me at least} is that this dessert is both gluten and dairy free and it’s scrumptious!
Check out that super cute ice cream tub! Isn’t it cute?!?! I love it and it works great too. Make sure you use your favorite pie crust or if you don’t want to make your own then buy a premade dough. And, of course, you need some amazing apples too!
Even though it’s summer here, apples are perfectly in season in New Zealand. My family devoured the small box of apples that I was sent and I almost didn’t get make this recipe..luckily I swiped a few apples from the kids and was able to get this made for y’all! These Envy apples are now in my top 3 favorite apples of all time!
Envy apples are available June through mid-October from New Zealand. They are new and hard to find, but they are worth it…TRUST ME! They are a bright red apple with crisp interior. A bonus is that they tend to resist browning (oxidation) when cut…this fact alone makes it worth it for me. My kids refuse to eat a browning apple..even if it was just cut! They are memorably sweet in flavor and perfect for fruit plates, salads and snacking. {On a side note: Cher tweeted that she doesn’t like apples but loves Envy apples…go figure!}

Apple Pie Ice Cream Sandwiches
This apple pie frozen dessert tastes like a slice of apple pie. Made with homemade apple pie ice cream tucked between 2 squares of cinnamon pastry crust.
Ingredients
Ice Cream
- 3 cups vanilla almond or soy milk, chilled
- 1/2 cup brown sugar
- 2 tsps vanilla extract
- 1/2 tsp cinnamon
Apples
- 2 cups peeled and diced apples
- 3 tbls brown sugar
- 1 tsp cinnamon
- splash water
Crust
- 1 recipe pie dough
- 1/4 cup butter (regular or dairy-free), melted
- cinnamon
- sugar
Instructions
- Freeze ice cream tub according to your ice cream maker's instructions.
Apples
- Combine apples, brown sugar, cinnamon, and water in a medium sized saucepan. Cook over medium high heat until the apples are soft and the sauce has thickened (about 15-20 minutes). Set aside to cool.
Ice Cream
- Combine ice cream ingredients in ice cream tub. Churn in ice-cream maker until light, fluffy, and frozen. When ice cream is almost done, spoon 1/3 of the apple mixture into the ice cream and let it continue to churn until its completely done.
- In a large, freezer safe container, spoon 1/3 of ice cream into container. Top with 1/3 of remaining apples. Continue layering, ending with apples on top. Cover and place in freezer for 6 hours or overnight.
Crust
- Preheat oven to 375F. Roll out your favorite pie crust into a thin rectangle shape. Using a pizza wheel, cut dough into small rectangles (about the size of half a graham cracker sheet) or triangles (about the size of a sandwich triangle).
- Carefully move dough onto a cookie sheet sprayed with non-stick cooking spray. Brush melted butter on each dough piece and sprinkle liberally with cinnamon and sugar. Bake for 10 minutes or until golden brown.
- Let cool completely.
Assembly
- Let ice cream soften a little bit and then scoop some onto the a piece of crust (place cinnamon side down, then add ice cream). Top with another piece of crust, cinnamon side up.
- Return to freezer for eating later or go ahead and enjoy now!

Envy is the best apple ever! I have such a sweet tooth and they fit the bill. I haven’t seen them in the stores yet this year and am getting annoyed. What aren’t they everywhere?! Grr. BTW, there’s also a Washington crop that comes out after the New Zealands are gone. Great if you can find them! They also tell me they’re working on an organic Envy. I try to eat organic apples, but make an exception for Envy since they’re so amazing. So that’s good news.
