Hubbyman and I just celebrated our 16th wedding anniversary. It seems like just yesterday that we got married and were sitting on the beach in Jamaica sipping on rum filled drinks and soaking up the sun on our honeymoon. {Side note: If you have never had Jamaican Rum you are missing out..you need to pick up a bottle ASAP.} I served up these Boozy Horchata Slushies for our anniversary and they quickly took us back to those long lost memories sitting on the beach.
Don’t worry if you have never been to Jamaica..close your eyes, sip on one of these, and it’s almost like you are there. I really do recommend that you try to hunt down that rum, but really any light rum will work perfectly! All the sweet amazing flavors of horchata with the smooth rum are a match made in heaven.
Horchata is drink made with rice or almonds, cinnamon, and vanilla. We get it a lot here in the Southwest in Mexican restaurants, but without the alcohol. It’s a very family-friendly drink and the kids love it!
To make these slushies, you will need some sort of slushie maker cup. I love my Zoku slushie makers..they actually work and are super easy for a quick treat.
Boozy Horchata Slushies
Be transported back to the beach with these Boozy Horchata Slushies.
Ingredients
- 2 cups rice milk
- 1/3 cup Coco Real Cream of Coconut
- 3/4 tsp ground cinnamon
- 3/4 tsp vanilla extract
- 2 oz Jamaican Rum, divided
Instructions
- Place 2 slush mugs (I used Zoku slush cups) in the freezer for 8 hours or overnight to freeze.
- In a medium bowl, combine first 4 ingredients with a wire whisk. Pour into 2 frozen slush mugs and let sit for 60-90 seconds, then scrape down the sides. Repeat until the liquid is frozen and thick..about 10-15 minutes or so. Once it is all frozen, add 1 oz rum to each mug and begin the freezing process again.
- When the rum is added, the slushie will become more liquid-y again. This is totally normal, but keep at it and it will freeze back up in another few minutes.
- The whole freezing process takes around 20 minutes or so, but could be shorter or longer depending on air temp, if the ingredients are chilled, etc.
- Sit back, close your eyes, and enjoy...it's almost as good as being on the beach!
