Summer fruit and leftover chicken plus a quick and easy dressing make an amazing main course salad for summer. I’m totally in love with this Apple & Chicken Salad with Honey Poppyseed Dressing.
I avoid turning on my oven in the summertime here in Phoenix…just last week it was 116F. {I know…that’s crazy hot, right?!?!?!} Having the oven on for even just a few minutes can heat the house up, so we do a lot of grilling and salad. Lots and lots of salads. Plus, when it’s 116F+ outside, the last you want to do is eat a big heavy meal.
Usually, my salads aren’t super fancy and use up leftovers from the days before and that’s what happened with this salad. Leftover rotisserie chicken from our grill, almonds, fresh Jazz apples (thanks to Jazz apples for the box of beautiful fruit), and a dairy free honey poppyseed dressing that I quickly threw together. It’s creamy, sweet, and goes perfectly with the chicken and apples.

Apple Chicken Salad with Honey Poppy Seed Dressing
This delicious chicken salad with crisp apples makes the perfect light summer 15-minute supper!
Ingredients
- 2 cups shredded chicken
- 1/2 cup almonds (raw or roasted)
- 2 apples, cored and thinly sliced
- 8 cups chopped romaine lettuce
- 1 cup mayonnaise (I used Veganese)
- 4 tsp apple cider vinegar
- 2 tbsp raw honey
- 2 tsp poppy seeds
- salt and pepper
Instructions
- Place lettuce in a large bowl and top with chicken, apples, and almonds.
- In a mason jar, combine mayo, vinegar, honey, poppy seeds, salt, and pepper. Screw on lid and shake well to combine. Taste and adjust honey, salt, and pepper.
- Drizzle dressing over salad, toss, and enjoy.
