Delicious Apple Pie Pancakes….they’re like restaurant pancakes only you get to stay home.
It’s almost like eating dessert for breakfast…but since these are pancakes and pancakes are for breakfast I say they are definitely breakfast! Fluffy pancakes topped with a quick apple pie-type filling will make you crave these every week.
One Saturday, I had a craving for gourmet pancakes, but I really had no desire to go out for breakfast. So I searched my pantry and came up with these delicious and easy Apple Pie Pancakes. I’ve served for several big family breakfasts and just on normal Saturday mornings and they are always a huge hit. There is never a bite left.
You can use your favorite boxed pancake mix to get a quick start to the pancakes or try my Whole Wheat Blender Pancakes or my Gluten Free Pancakes

Apple Pie Pancakes
Delicious Apple Pie Pancakes....they're like restaurant pancakes only you get to stay home.
Ingredients
- 1 batch of your favorite pancake recipe, prepared for 12 pancakes
- 2-3 tsps cinnamon (or apple pie spice), divided
- 3 apples, peeled and cored
- 1/2 cup water
- 1 tsp cornstarch
- 1/4 cup brown sugar
Instructions
- Slice apples into 1/2 inch to 1 inch pieces. Add apples, 1 tsp cinnamon, water, cornstarch, and brown sugar to a medium saucepan. Cook on med, stirring occasionally for 20-30 minutes until apples are as tender as you'd like them to be.
- While apples cook, prepare your pancake mix per your recipe's instructions. Add in 1-2 tsps cinnamon to the batter. Pour onto hot griddle and cook on med-high heat for 3-5 minutes per side.
- Serve pancakes with cinnamon apples over the top.
