Baja Chicken Soup comes together in a snap and simmers all day in a slow cooker for an easy weeknight supper!
The weather is starting to cool off a bit and it’s so nice to get out. So, last weekend we went hiking in the Superstition Mountains for five hours to see some hieroglyphs. The hike was amazing, even though it was slow going with the kids but really who cares because the views were amazing and the final destination was stunning. It’s so hard to believe that a place like this exist just a short way from our home. By the time we finally made our way back to the car it was supper time and we were all starving. Luckily, my mommy brain was working and I had the brilliant idea to put this Baja Chicken Soup in the slow cooker before we left the house.
Last week Pacific Foods sent me a few of their soup starters and I’m so glad I had them on hand to start supper before heading out. Oh my goodness, y’all…the house smelled amazing when we got home. I’m so thankful that I have a brilliant idea occasionally because by the time we got home all I wanted to do was pull off my hiking boots, wash my face, and eat.

Baja Chicken Soup (slow cooker chicken soup)
This slow cooker chicken soup has amazing Tex-Mex flavors. If you want to add a bit more spice to the Baja chicken soup, don't remove the seeds and membrane from the jalapeno.
Ingredients
- 32 oz Pacific Organic Tortilla Soup Base
- 4 cups rotisserie chicken, shredded
- 8 oz frozen corn
- 1 jalapeno, seeded and finely diced
- 1/2 red onion, finely diced
- 2-3 cloves garlic, minced
- 12 oz canned black beans, with liquid
- 1/4 tsp cumin
- juice of 1 lime
- optional toppings: red onion, cilantro, lime wedges, sour cream, avocado, crushed tortilla chips
Instructions
- Combine first 8 ingredients in a slow cooker.
- Cook on low for 6-8 hours. Squeeze in fresh lime prior serving.
