I have to be honest, I had never had rice pudding before I made this. I’ve always wanted to try it, but just never have. And in the spirit of the season, I opted for a Pumpkin Rice Pudding to try in the slow cooker. Have you been following along this week during Crocktoberfest? If you haven’t noticed I love cooking in my slow cooker…I think I’ve mentioned before that I have about 5 different slow cookers and I use them all! Yes, sometimes all at the same time (usually on holidays though). If you haven’t tried cooking in one recently, I challenge you to do it. Recipes have changed and improved so much over the years…you’d be really surprised.

Pumpkin Rice Pudding (slow cooker rice pudding)
This slow cooker rice pudding has the perfect fall flavor of pumpkin pie! Because it's a slow cooker dessert, your house will smell amazing!
Ingredients
- 4 cups milk of choice (whole, soy, rice, etc)
- 2 cups rice (short grain white rice)
- 2 cups pumpkin puree
- 1 cup raisins (or dried cranberries)
- 1/2 cup brown sugar
- 4 tsp pumpkin pie spice
- 1 tsp pure vanilla extract
Instructions
- Spray slow cooker very well with non-stick cooking spray (or use a slow cooker liner).
- Add all the ingredients to the slow cooker and stir well.
- Cook on low for 3- 4 hours or until the rice is tender.

It really is going to depend on how big you want your servings to be for this one. I tend to say 4 servings per cup of dry rice. ~w

Could brown rice be used?
Probably, it might need more water and a longer cooking time. You’d just have to play with it. :). Let me know how it works out.

I just had rice pudding for the first time recently, too! My boyfriend got some from Pita Jungle and it was soooo good! I don’t know, it just never sounded appealing to me, but I was pleasantly surprised. Love the pumpkin twist and love the slow cooker approach – this one’s sure to be a hit!
