Phoenix is known for our bright, sunny weather. It’s hot here. The locals absolutely love any fruit that can help cool us down. Maybe that’s why I love the light, cooling flavors of citrus fruits so much. They are so clean and crisp that they make the perfect dessert for a hot summer day. I recently wrote about the uses of limes, but I have to admit that lemons are my absolute favorite! The fresh scent and the bright yellow color has a way to rejuvenate me. I’m a sucker for a good lemon meringue pie.

In Arizona, we have some of the most beautiful lemon trees. They grow well here because they thrive in warm climates and they can tolerate drought pretty well. Once a year, I drive my kids out to a pick-your-own citrus farm where we load up on fresh lemons. It is so much fun picking them off the tree. The first thing we make when we get home is freshly squeezed lemonade.

With so many lemons waiting in our baskets, I have to come up with lots of recipes. In my case, life giving me lemons is the best excuse to search for yummy desserts. These lemon desserts really allow the lemon to shine with their bright and tangy flavor. The perfect balance of sweet and tart!
