The end of this school year has been super crazy around here. Our youngest son graduated from 5th grade {Jr high next year!} and our middle daughter graduated from high school. Not to mention my Dad had a birthday, it was Memorial Weekend and we had lots of relatives visiting from out of town as well.
With all of the running around I did and with being so busy, it was hard for me to eat healthy. As you can imagine, by the time things settled down, I was craving veggies, veggies and more veggies! Broccoli is one of my favorites, so I decided to make my Broccoli Saute’. It’s super easy to make and has a wonderful savory flavor with a hint of sweetness.
Here’s all you need:

⅓ C olive oil

4 garlic cloves, thinly sliced

3 medium heads of broccoli, cut into bite-sized pieces

⅓ C toasted pecans
-
½ C raisins {regular or golden}
-
½ tsp crushed red pepper flakes

Kosher or sea salt
Here’s all you do:

On med-high, heat oil in a heavy skillet.

Saute’ garlic until fragrant, being careful not to brown. Remove garlic from pan

Add broccoli to pan and cover, cooking until tender, about 5-6 minutes; stir often

Put garlic back in pan and add pecans, raisins and pepper flakes; heat through

Salt to taste and serve
Pairs well with chicken and pork

Love this recipe. I thought the pecans were bacon. But this is better for me.

We both love broccoli, but hubby doesn’t like it as much as I do. This could be a way to get him to eat it more often. Thanks for sharing.
