I’ve been having so much fun with the kids this summer. We’ve been swimming like crazy {staying out of the heat in Southern AZ is a must!}, went to a couple of movies, took a trip to California to see my family, there have been friends sleeping over and even a couple of parties.
There has also been some eating. A lot of eating, actually. It seems like my teenage girls are hungrier than I thought during the day. They were always asking for food. ALWAYS. They would just eat whatever they could find, and, to be honest, it usually wasn’t something healthy.
I had never made granola before, so I thought this would be the perfect opportunity to try it. It’s crunchy, sweet & healthy and there are lots of ways to eat granola, too. You can sprinkle it over yogurt, have it in place of cereal, use it as an ice cream topper, or just pop a handful in your mouth.
I must say, it was quite popular. In fact, I had to make a second batch right away, because my granddaughters came over shortly after I made the first batch, and they ate all of it. Seriously, those girls tore it up! I didn’t even get a chance to photograph it. It wasn’t a big deal though, because this recipe literally took about 15 minutes to make.

Easy Homemade Granola
Here’s all you need:
1 ½ C rolled oats {not instant}
½ C sunflower seeds, shelled
½ C raisins
¼ C pecans, chopped
¼ C slivered almonds
2 Tbsp melted butter (or butter substitute)
1 Tbsp oil
2 Tbsp Agave
2 Tbsp light corn syrup
Here’s all you do:
Preheat oven to 375*
In a medium bowl, mix all first five ingredients together.
In a small bowl, mix butter, oil, agave and corn syrup; pour over dry mixture and stir until well combined.
Spread onto a 9×13 baking sheet and bake for about 10 minutes, stirring a few times to help the mixture dry and to help prevent burning.
Stir again after removing from oven. Cool completely and store in an airtight container.
