I have to be honest, I had never had rice pudding before I made this. I’ve always wanted to try it, but just never have. And in the spirit of the season, I opted for a Pumpkin Rice Pudding to try in the slow cooker. Have you been following along this week during Crocktoberfest? I’ve shared slow cooker recipes all week along with some of my favorite bloggers. The recipes this week all look AH-MAZ-ING!
If you haven’t noticed I love cooking in my slow cooker…I think I’ve mentioned before that I have about 5 different slow cookers and I use them all! Yes, sometimes all at the same time (usually on holidays though). If you haven’t tried cooking in one recently, I challenge you to do it. Recipes have changed and improved so much over the years…you’d be really surprised.

WHY don’t people tell how many their recipe serves?!?
Wendy O'Neal says
It really is going to depend on how big you want your servings to be for this one. I tend to say 4 servings per cup of dry rice. ~w

Just to be clear, the rice is uncooked, right? (Novice chef here!) Thanks!
Wendy O'Neal says
No worries Katie! We all start somewhere. 🙂 Yes, the rice is uncooked when it goes in the pot. Enjoy!

Could brown rice be used?
Wendy O'Neal says
Probably, it might need more water and a longer cooking time. You’d just have to play with it. :). Let me know how it works out.

I just had rice pudding for the first time recently, too! My boyfriend got some from Pita Jungle and it was soooo good! I don’t know, it just never sounded appealing to me, but I was pleasantly surprised. Love the pumpkin twist and love the slow cooker approach – this one’s sure to be a hit! PS – jumped over here from the AZ Bloggers Network. Your blog looks great!
