Everything you love about tacos, only better because they are filled with bacon! Try these BACON TACOS for the next Taco Tuesday. You’ll love the combination of crispy bacon, creamy coleslaw, and spicy pico de gallo all in a warm corn tortilla!
Bacon Tacos
Move over Bacon, Lettuce, & Tomato Sandwiches…there is a new kids on the block! This is not a taco shell made out of bacon, but the most unbelievable taco you’ve ever had. This taco is filled with hot, crunchy, salty bacon.
A couple months ago Hubbyman and I went to a huge food truck festival and one of the trucks served up a version of these bacon tacos. Hubbyman took one bite and proclaimed that I needed to make these at home in the next week.
So, our fun food truck outing turned into me dissecting the bacon tacos that he was swooning over. I couldn’t eat the ones served, but it didn’t take much to figure out how to make them so everyone in the family could enjoy them. And since I’m a good wife {well..I was on this day} I served these bacon tacos for lunch the following Saturday.
Personally, these tacos would make a great breakfast, lunch, or supper. In fact, we may or may not have eaten these for all three meals in one day. I’m just sayin’…bacon is amazing! I would say it was the perfect food but it would only reach perfection status if had zero calories. And as of now, I have not found any bacon with zero calories!
The bacon is hot and crispy. The coleslaw is cold and creamy. The salsa is crunchy and spicy. Could there be a better taco? I really don’t think so!
Bacon Tacos
These bacon tacos make an easy weeknight dinner and kids love them! Use store-bought coleslaw, or make homemade coleslaw; the choice is yours!
Ingredients
- 8 corn tortillas (16 if you want to double wrap them)
- 1 pound bacon
- coleslaw, your favorite recipe
- pico de gallo
Instructions
- Cook bacon in the oven in a single layer, according to this method. While bacon cooks, prepare the pico de gallo.
- When bacon is completely cooked, remove from oven and let cool and drain on paper towels. Break bacon into large pieces.
- Warm tortillas in the microwave for about 20 seconds, top with bacon, coleslaw, and pico de gallo.

Notes
- Some people like to double up the tortillas; the choice is yours if each taco uses one or two tortillas.
