Moist and delicious, these Grapefruit Scones are a little sweet and a little tangy. Using fresh squeezed grapefruit and fresh grapefruit zest pretty much guarantees they will be full of grapefruit flavor.
When grapefruit is in season, like it is now, I try to find lots of creative ways to use it. We have a medium sized tree in our yard so I always have plenty to go around. So this year, I thought I would share these amazing gluten and dairy free scones with y’all. Even if you don’t have a tree full of fruit these scones are totally worth picking up some grapefruit the next time you’re at the store.

Grapefruit Scones
Grapefruit Scones are the perfect breakfast or snack with a cup of coffee! This scones recipe is gluten-free, dairy-free, and vegan!
Ingredients
- 2 cups gluten free flour blend
- 1/3 cup sugar
- 1 tbls baking powder
- 1/4 tsp salt
- 1/2 cup (1 stick) butter, cut into cubes (I used Earth Balance baking sticks)
- 2 tbls fresh grated grapefruit zest
- 3/4 cup fresh squeezed grapefruit juice
Icing
- 1 cup powdered sugar
- splash of grapefruit juice
Instructions
- Preheat oven to 450 F.
- In a large bowl, combine flour, sugar, baking powder, guar gum (if needed), and salt. Lightly whisk to combine. Using a pastry blender, cut in butter until it's crumbly and the size of peas. Add in zest and half the grapefruit juice to the mixture and work to combine, adding a little more juice as needed until dough is moistened and will stick together when lightly pressed.
- Turn out onto a lightly greased cookie sheet and gently press into a 10 inch circle (about the size of a dinner plate). Cut dough into 8 pieces and separate on the baking sheet so they don't bake into each other. Brush tops with a little almond milk (or milk of choice).
- Bake for 15-20 minutes or until cooked and lightly golden brown. Cool before frosting.
- For the icing: Combine powdered sugar and juice in a small bowl. Add juice by the teaspoon full until the icing is just barely thin enough to drizzle on scones.

I made these yummy scones today.. The flavor was great and they went nicely with my coffee. However, mine turned out a bit dense. Just wanted to let others know with scones the less you mix the dough the better. I over handled mine! Easy to do with scones and this really affects the flakiness. But were more the consistency of a bisquit. My children and I still gobbled them up. Certainly better than most commercial baked goods bought in a store. Lesson learned. I am sure they will come out perfect next

These look great but we cannot have grapefruit because it conflicts with medications we take. Could lemon be substituted? If so, do you think some sweetener would be needed to compensate?

Hi Susan, I bet these would be so good with lemon instead of grapefruit. Grapefruit are pretty tart like lemons so I’m thinkin’ just to make it as is…there is already a little sugar in the dough plus the frosting. w-

Thank you so much for your quick reply. I’m very new to gluten free baking. I’ve read that when using gluten free flour one needs to add Guar Gum to compensate. I notice there is none in this recipe. Is there a rule of thumb on when it is or isn’t necessary in baking?

Hi Susan! There is guar gum listed as an ingredient for this recipe (if your AP flour doesn’t already have it added). However, some flour blends have guar gum or xanthum gum already added, so in that case you’d skip adding additional. I almost always use one of the gums, since they are used to bind and thicken in gluten free baking….so if you don’t use them then you might end up with a pile of crumbs instead of a tasty treat. 🙂 w-

Yes, it should work fine. You might need to adjust the quantity a little, so start with less than what’s called for and slowly add until you get a nice consistency.
