Cranberry White Chocolate Cookies
Yes, I was on a cookie kick last weekend when I came up with these Cranberry White Chocolate Cookies! I originally started off making these Chocolate Chip Cookies, but I ended up splitting the dough and I wanted to do something more creative than chocolate chips with the second half of the dough.
So, I dug through the cabinets and found some leftover dried cranberries and about 4 bags of white chocolate chips. Apparently, I buy them and forget to use them.
I have to be honest, my kids were not thrilled with this idea, but I promised they would be good. They kids reluctantly tried them and wouldn’t ya know it….they agreed that they were good. They did say they weren’t as good as chocolate chip cookies, but they happily ate a second (and third) cookie. So, I suppose these are more of an adult cookie since the kids don’t seem to fond of the tart cranberries!

Cranberry White Chocolate Cookies
Tart and sweet, these Cranberry White Chocolate Cookies are festive and perfect for the holidays. Everyone loves the tart dried cranberries in these crispy cookies.
Ingredients
- 1/2 cup + 2 tbls butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp pure vanilla extract
- 3/4 cup flour
- 3/4 cup almond meal
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup white chocolate chips
- 1/2 cup dried cranberries
Instructions
Preheat oven to 350 F and spray a rimmed cookie sheet with non stick cooking spray.
In a mixer, combine butter and sugars until light and creamed well. Add remaining ingredients, expect white chocolate chips and cranberries. Mix until well combined. Dough will be thick. Add white chocolate and cranberries and gently stir by hand to incorporate.
Drop by 1 1/2 tablespoonfuls (or use a #40 cookie scoop) onto prepared pan leaving 2 inch spaces between cookies. Bake for 12-15 minutes or until cookies are just starting to set.
Notes
*Don't have almond meal...make your own by grinding almonds. Or substitute an equal amount of AP flour for the almond meal.

These look lovely. White chocolate and cranberry cookies are my guilty pleasure when I go to the supermarket on a Saturday! Although they come in bags of 6 and I usally get though them on all in a weekend! I think I’ll try these this weekend, thanks for the recipie.
