This easy Chocolate Mint Trifle Recipe is the perfect addition to any March festivities, but it’s great year round too. All you need is some homemade brownies, pudding, chocolate mints, and a little whipped cream for this fun dessert.
This is a fun and easy St. Patrick’s Day treat, but it’s great all year long too. It literally came together in under an hour (and most of the time was for cooling). Who wouldn’t love an Andes Mint Trifle any time of year!
I kept it pretty simple, but you could go all out and make everything from scratch. Scratch brownies, scratch pudding (just change the flavor), scratch whipped cream, etc…you get the idea. Or make it sure easy, premade brownie bites, premade pudding (though it would be more difficult to color and flavor). Get it?
It’s minty, It’s chocolaty, It’s green, It’s cool and creamy! It might be a PERFECT dessert.
Ingredients needed for this dessert
- prepared brownies (this homemade recipe is my favorite)
- instant vanilla pudding mix
- 2 cups milk (whatever you have on hand)
- mint (or peppermint) extract
- green food coloring of choice
- Andes baking mints or chocolate chips
- whipped topping or cool whip
- trifle bowl or pint-sized mason jars
How to make this dessert
- Cut prepared brownies into bite sized pieces.
- Combine vanilla pudding mix, milk, and mint extract. Whisk well to combine or use a blender to gently mix. Add food coloring until desired color is reached. Store in refrigerator until pudding is set.
- If using whole Andes mints, roughly chop them or use Andes baking chips
- In individual serving dishes or a large trifle bowl layer pudding, brownie, mints, pudding, whipped cream, and top with additional mints.
Make it your own
This is just a versatile dessert and can be adjusted to fit different holidays, what you have on hand or to suit different dietary needs. Here are few options to consider:

- Use white chocolate pudding
- Use a gluten free cake or brownie mix
- Use dairy free pudding/whipped cream
- Use red food coloring for Valentine’s
- Use an all natural green dye (to keep it dye free)

- 2 cups milk*
- 1/2 tsp mint (or peppermint) extract
- green food coloring of choice
- 1/2 cup Andes Baking Chips or chopped Andes Mints
- whipped topping
Instructions
- Cut prepared brownies into bite sized pieces.
- Combine vanilla pudding mix, milk (*amount according to package), and mint extract. Whisk well to combine or use a blender to gently mix. Add food coloring until desired color is reached. Store in refrigerator until pudding is set.
