I try to make most things from scratch for my family. However, sometimes I like to take a shortcut and this is my favorite shortcut recipe. The taste is the same as a scratch recipe, but without all the measuring and mess. I promise…you are going to love how easy this is.
The loaves in this picture are made with a mini-loaf pan. It makes the perfect size loaf for gift giving.
Easy Banana Nut Bread
1 box yellow cake mix
2 eggs
4 ripe bananas*
1/2-1 cup nuts, chopped
Smash bananas in a large bowl. Add remaining ingredients to bananas and mix well by hand. Spray 2 loaf pans with nonstick cooking spray and fill with mix. Bake at 350 F for 35-40 minutes.
*I use bananas that are too ripe to eat, so I throw them in the freezer until I have enough for this recipe. Just thaw them and then mash them up.*

Can I use melted butter for the pan ran out of cooking spray I put my walnuts inside the bread and ontop really delicious 😋 ty

Hi Rosa, I don’t think melted butter alone will keep it from sticking to the pan. You might try butter + a little cake mix (like you’d do with flour) or just line the pan with parchment. w-

Yes. Don’t make the recipe on the box. Add the dry cake mix to the banana mixture. w-

Have to admit I was a bit skeptical, but these turned out great! I added some cinnamon, chocolate chips instead of nuts, and a splash of milk to the batter. Kudos for a fab shortcut recipe!

I’ve made it twice more, my 3 year old LOVES it lol….my mom also tried the recipe using a bundt pan and added cool whip on the side for an event she attended-she brought home an empty platter 🙂

What do I cut back on so I may add some applesauce.?

Why do you want to add applesauce? Usually applesauce can take the place of eggs in a recipe, but with so few ingredients I’m not 100% sure it would work. You could always give it a try. The other thing is if you want more of an apple cake, then swap the bananas for the applesauce. w-

I love yummy recipes, thanks! What I do with too ripe bananas is peel them, mash them, and put them in a freezer bag. I freeze them 3 in a bag (most of my recipes that call for mashed bananas use 3). They freeze and stack very well. When I want to use them I just set them out on the counter for a couple of hours and then squeeze it out of the bag. Usefull food storage too.
