This is the last in my week-long series about pot roast and using up the leftovers. This is my favorite way to end the week. I LOVE nachos and this is so easy. If I’m being nice, I will make this for supper for the entire family…otherwise, it ends up being my end of the week lunch splurge!
This uses up so many leftovers that you will probably have a cleaned out fridge when you’re done. (I’ve included links back to some of my favorites for using in these nachos.)
No Fuss Oven Nachos
tortilla chips
cheese
taco meat (shredded or ground beef)
opt toppings: salsa, lettuce, sour cream, black olives, guacamole
Preheat oven to 375 degrees. In a rimmed cookie sheet, sprayed with non-stick spray, layer in your nacho ingredients: chips, beans, cheese, and meat. Heat in the oven until the cheese is melted and bubbly and the meat is warm (anywhere from 10-20 minutes). Remove from oven and add additional toppings.

I loved to make myself nachos as a Saturday afternoon snack when I was a teen. They were so yummy, and I was meticulous about putting the beans on every single chip, grating cheese over a layer, then more chip/beans and more cheese.
My sister was more practical. She’d heat up the beans so they’re liquidy, then simply pour them over the chips.
