Change up your morning waffles and stuff them with bacon! These BACON STUFFED WAFFLES are the perfect sweet & salty breakfast blend!
A couple years ago on vacation, we went to a small local breakfast restaurant in San Diego and my husband fell in love with their Bacon Stuffed Waffles breakfast. Well, their waffles were humongous {and so was their bacon}, but I decided to drag out my waffle maker and give it a go at home with my regular-sized waffle maker.
Ya know what!?!?! They were amazing. I used a baking mix to make these a quick fix for busy Sunday mornings, but doctoring it up just a tad makes them scrumptious. But no matter what waffle recipe you use…please promise me you won’t skimp on the maple syrup.
Never. Never. Never use imitation maple syrup. Your breakfast deserves better than that brown colored corn syrup. Use the real stuff. I promise it’s worth it. Totally worth it!

Bacon Stuffed Waffles
These bacon stuffed waffles are the perfect sweet and salty breakfast. Homemade waffles make the best weekend brunch, too!
Ingredients
- 1 pound thick cut bacon (about 14 -16 slices)
- 1 recipe waffle batter, prepared
- warm maple syrup
Instructions
- Cook bacon until crispy (either in the oven or in a cast iron pan on the stove top). Drain and cool bacon on paper towels.
- Meanwhile, prepare waffle batter, set aside, and preheat waffle maker.
- Cut up 2-3 slices of bacon into bite sized pieces and add to waffle batter. Pour batter onto hot waffle iron and add 2 slices bacon, crosswise for each waffle. Close lid and cook batter according to your machine instructions.
- Serve with butter and warm maple syrup.
