Once you pop one in your mouth, you won’t be able to stop eating these addictive, little Churro Bites!
It’s been two years since I’ve had a churro. That’s three trips to Disneyland and probably 24 trips to Costco smelling those amazing sticks of cinnamon goodness. Plus it’s just pure evil to have to watch my kids eat them over and over again in front of me. Well….no more! These babies are gluten free, but they are so easy that anyone can make them and they taste amazing.
I take a lot of my photos in my garage (strange, I know) but it has great light! While I was snapping these shots, my FedEx guy showed up with a package so we started chatting and he had a few. He gave them two thumbs up and promised if I kept feeding these to him that my packages would always be delivered on time and in perfect condition. In fair disclosure…my packages are always delivered perfectly, but it was still funny. After we finished chatting, he grabbed one last handful, jumped in his truck and off he went! So, if Mr. FedEx can’t tell they are gluten free…then neither will you.
I think what makes these bites perfect is using the right oil to fry them in. I’ve partnered with Mazola® Corn Oil for the next few months to bring you some amazing recipes. However, I have to save that Mazola was already my preferred brand of corn oil, so it’s an easy partnership for me. I love that you can easily just swap out whatever oil you are already cooking with for Mazola. I love that since they are 100% pure oil {with no additives} the flavor of whatever I’m cooking comes through and not an oil flavor! Did you know that corn oil has four times more plant sterols than olive oil and 40 percent more than canola oil. Plant sterols are plant-based substances found naturally in fruits, vegetables, nuts, legumes and vegetable oils, like corn oil. These sterols can play a part in reducing cholesterol levels and can have an important part in a heart healthy diet. Well…except when you eat the batch of churros yourself before the kids get home from school.
Churro Bites
Churro bites are a bite-sized version of the popular fried Mexican treat. Easy to make and completely irresistible!
Ingredients
- 1 cup water
- 1 1/2 tbs sugar
- 1/2 tsp salt
- 2 tbs butter (or butter substitute)
- 1/2 tsp vanilla
- 1 cup oat flour
- 1 tsp guar gum (or 1/2 tsp xanthan gum)
- 1 cup sugar
- 2 tbs cinnamon
- Corn Oil, for frying
Instructions
- Heat 3 to 4 inches of corn oil in a large, heavy-bottomed pot set over medium-high heat until it reaches 375ºF. (Make sure to have 3-4 inches above the oil to prevent it from bubbling over when you add your dough.)
- In a separate pot, combine water, 1 1/2 tbs sugar, butter, and salt. Bring to a boil and remove from heat. Add vanilla and stir. Add in flour and guar gum. Continue mixing until a dough ball forms and everything is incorporated. Let cool slightly, for a couple of minutes.
- In a bowl, combine 1 cup sugar and cinnamon and set aside.
- Cut the tip off of a heavy duty pastry bag (a Ziploc bag will not work as it's not strong enough). Add dough and squeeze about 1 1/2 - 2 inches of dough carefully into hot oil. (Note: I used a butter knife to gently cut off the dough where I wanted since it is very thick.) Add 5-6 bite sized pieces to the hot oil at a time. Fry in batches. Cook for about two minutes, turning bites half way through. When bites are cooked, remove from oil and drain slightly before adding to cinnamon sugar mixture. Toss to coat well and set aside to finish cooling.
- Enjoy while warm.

This is a wonderful recipe. I really like this recipe and to make these for a Holiday dessert would be great. I have made this but I use tortillas and cut them up in triangles and deep fat fry them and put cinnamon sugar on them. They taste so good!!

Well. These. Just. Need. To. Happen. I adore oat flour, but those of us that can’t do corn? What’s the best oil for frying these in? I can’t do vegetable, canola or corn. Can you fry in avocado or coconut??

Hmmm…not sure. I’d try the coconut oil first, but I’ve never friend in anything in either of those oils. Can you do peanut oil?

I can’t do corn oil as my celiac is cross-reactive to corn, but subbing that out is a no brainer. My question is, has anyone tried this with an all purpose gluten free flour blend? I have that, almond flour, coconut flour, and a few others but no oat flour.

I have only used the oat flour, but I used up the last of my oat flour with a batch this weekend. I will be experimenting with other flours on my next batch. 🙂 Although, I don’t think almond flour would work and the coconut flour would need less flour or more water. An AP gluten free flour would be your best bet, especially if it has the binder already.

What is guar gum?

Hi Gina! Guar Gum is used as a binder since there is no traditional flour in the recipe. You could try using traditional flour in the flour in the recipe if you’d like. I get the guar gum at my grocery store, but it’s also at Whole Foods and on Amazon.

Corn oil is the only oil i use for frying and It’s kind of familiar tradition since my mom only uses corn oil as well. Love your Churro bites recipe… with a cup of hot chocolate, mmmm!!! Trying this soon.
