Cranberry, Goat Cheese & Pecan Salad
Once I started making my own dressings, my family became so spoiled. I stopped buying store bought dressings because making my own is so easy and fun. Plus I’m not stuck with an entire bottle of something that we have to use up. I just make what I need for tonight…it takes only a couple minutes….then I can make something different for tomorrow. The other thing I love about making my own dressing (like my creamy avocado dressing) is that I get to control the sugar and salt content.
How to Make Homemade Vinaigrette
I love creating salads and quick vinaigrettes with big flavors they are the perfect way to add vegetables to your supper table.
Vinaigrettes are super easy….olive oil plus some sort of acid (any citrus juice or vinegar will do), a pinch of sugar, and any other herbs or seasonings you like! Bam! Salad and homemade dressing done in less than 10 minutes!

Cranberry, Goat Cheese, & Pecan Salad with Orange Vinaigrette Ingredients
- 1 10oz bag romaine lettuce
- 1/2 cup dried cranberries
- 1/2 cup candied pecans
- 2 oz goat cheese
- juice of one orange (~1/3 cup)
- 1/3 cup olive oil
- 1 garlic clove, finely minced
- 1/4 tsp salt
- dash of pepper
- 2 tsps sugar
Cranberry, Goat Cheese, & Pecan Salad with Orange Vinaigrette Directions
In a large salad bowl, combine lettuce, cranberries, and pecans. Pinch off small portions of the goat cheese and add to the salad. I love making it look pretty when I take it to a party, but when it’s just the family at home…I just throw it all in a big bowl.
Add vinaigrette ingredients to a pint sized mason jar, put on the lid and give it a good shake. Easy Peasy! Taste and adjust the sugar/sweetness to your taste.

Ingredients
- 1 10 oz bag romaine lettuce
- 3/4 cup dried cranberries
- 2/4 cup candied pecans
- 4 oz goat cheese, crumbled
- juice of one orange (~1/3 cup)
- 1/3 cup Extra Virgin Olive Oil
- 1-2 garlic cloves, finely minced
- 1/4 teaspoon coarse Kosher salt
- dash of pepper
- 1-2 teaspoons sugar, opt
Instructions
- In a large salad bowl, combine lettuce, cranberries, and pecans. Pinch off small portions of the goat cheese and add to the salad.
- In a small mason jar, add orange juice, oil, garlic, salt, and pepper. Add in 1/2 of the sugar, if desired. Screw on lid and shake well to combine. Taste the dressing to see if it is sweet enough for your taste.
