A couple weeks ago, Udi’s asked me to create a “hack” using one of their products, plus a very small selection of other ingredients. I thought this was going to be a super easy challenge, but it was actually a lot harder than it looks. Seriously, this challenge almost got the best of me…but it ended up being a lot of fun last weekend playing with all the ingredients. I ended up creating these easy gluten free fried “pies” using their bread for the pie crust.
Don’t these easy gluten free fried “pies” look totally scrumptious? They were gobbled up in about 2 minutes…I almost didn’t get these pictures because the kids started swarming like a bunch of hungry sharks. The combination of chocolate, peanut butter, and coconut is absolutely amazing. Of course all that butter they are fried in soaks into the bread and creating that buttery crust flavor that is what’s delicious about a fried pie.
This hack really does get the bread to taste almost like a fried pie. Make sure to take the time to cut off the crusts, then after filling the inside, pinch the sides gently together. It helps keep the filling inside while frying, but it doesn’t seal shut. Yes, that is a lot of butter in the pan; however, it is necessary to get that buttery flavor. It soaks all the way through both slices of bread so the inside becomes a moist and creamy middle with a crunchy outside. By the time both sides have soaked up the butter it starts to brown on the outside. Make sure sprinkle with powdered sugar right when it come out of the hot butter.
Easy Gluten Free Fried Pies
The combination of chocolate, peanut butter, and coconut makes these fried pies absolutely delicious. The dairy-free butter they are fried in soaks into the bread, creating a crisp, buttery crust flavor.
Ingredients
- 2 slices Udi’s Gluten Free Millet-Chia Bread
- 1/2 tsp natural peanut butter (or other nut butter)
- 1/2 tbsp mini chocolate chips (or my favorite dairy-free brand
- 1/2 tbsp sweetened shredded coconut
- 1 tbsp dairy-free butter
- Optional toppings:
- powdered sugar
- cocoa powder
Instructions
- Carefully, remove crusts from each slice of bread. Spread a very thin layer of peanut butter on one slice of bread. Top peanut butter with chocolate chips and coconut. Press second slice of bread onto the first to create the “pie”.
- Melt butter in a small skillet over medium high heat. Once butter is melted, add pie to butter and gently fry for about one minute pressing gently with a spatula to help the bread stick together. Then flip the “pie” over and continue frying and gently pressing on the second side. Pie is done when both sides are lightly browned and all the butter has soaked into the bread.
- Remove from pan, cut at a angle and top with powdered sugar and cocoa powder before serving.
- Makes 2 small pies.
Notes

I have one of those fried pie makers. I wonder if it would work with gluten free bread, buttered.
I wonder if this would work with apple pie filling, or cherry pie filling… or ????

Well, for something that was a challenge, you made it look effortless. And it makes me want to try Udi’s. I mean, I’m sure it could be done with other breads? But yours look so perfect that I wouldn’t want to mess with trying something else.
