A couple times a week, I wait for the kids to go bed, then I light some candles, make up one of these Flourless Mug Cakes. It doesn’t need any frosting, but sometimes I use whatever leftover frosting I have on hand or top with a dollop of whip cream.
Flourless Mug Cake
Taking a few minutes in the evening for myself really helps me recharge during the busy holiday season. I change up my mug cakes to include seasonal flavors so I feel like I’m indulging when I’m actually being good….well for the most part.
This mug cake is also a great addition to your holiday table. So if you are having just a few people for Thanksgiving, then skip the giant dessert table and make these individual mug cakes for everyone. I promise everyone will love having their own hot dessert after a big Thanksgiving supper.
This year I’ve been trying to reduce my sugar intake by using SPLENDA® Sweetener Products occasionally and I’m lovin’ their new SPLENDA® Naturals Stevia Sweetener. I’ve been adding it to tons of things like my morning coffee, individual serving desserts, and my Pumpkin Pie Smoothie.

Flourless Mug Cake
Life can be hectic, so take a few minutes for yourself with this easy and delicious Flourless Mug Cake. It's got just a couple of ingredients and is ready in less than 5 minutes.
Ingredients
- 2 eggs
- 2 tbls unsweetened almond milk
- 2 tbls almond flour
- 1 tlbs cocoa powder
- 5 packets SPLENDA® Naturals Stevia Sweetener
- 1 1/2 tsps vanilla extract
- pinch salt
Instructions
- In a 1/2 pint sized mason jar (or in a microwave-safe coffee cup), add egg and beat with a fork. Add in remaining ingredients and stir gently to combine.
- Microwave on high for 1 1/2-2 minutes. The top of the cake may look a little wet, but that's okay. Top with fresh fruit, whipped cream, or a tiny bit of frosting.
