Keto Chicken, Bacon, & Spinach Salad is a great way to use up leftovers or prepare in advance for a quick, low carb lunch or dinner. It’s so delicious and full of flavor that you’ll forget this is keto friendly.
If you ever have leftover rotisserie chicken or turkey from the holidays, then this salad needs to be added to your meal rotation. It’s so good, in fact, that I’ll make extra chicken just so I can make this salad. You are gonna want to make this healthy chicken salad ASAP! Isn’t it gorgeous?!?!
Keto Chicken, Bacon & Spinach Salad
I seriously can’t get enough of this salad. So, I had to show y’all how easy it is to throw it together. If you don’t have any leftover chicken or turkey, then cook some up now so you can make this salad this week. I think I could eat this salad every day and be happy.
What you need for this low carb salad:
cooked turkey or chicken
baby spinach
crumbled feta cheese
bacon
jalapeños
hard boiled eggs
pecans (or walnuts)
strawberries, sliced
White Balsamic Vinaigrette (homemade or store bought…any white balsamic vinaigrette should work.)
Customize Your Low Carb Salad
This is the way that I love to eat this low carb salad, but it’s a salad….so make it your own if you don’t care for one of the above ingredients.
Here are a few swap ideas that would keep this a low carb salad:
- cheddar cheese for the feta cheese
- macadamia nuts or brazil nuts for the pecans/walnuts
- raspberries/blackberries for the strawberries
- bell pepper or red onion for the jalapeno
- any dark leafy green for the spinach
- leave off the bacon if you don’t eat pork
There really is no wrong way to eat this keto-friendly salad. I love the way all the flavors are together, especially the white balsamic vinaigrette dressing. It’s light and refreshing. A regular balsamic vinaigrette will work in a pinch, but definitely try to find a white balsamic dressing.
Can this salad be made in advance?
Absolutely it can be made in advance. There are two ways to make it in advance. First, prep everything and it ready to be assembled later. Or second put it all in an airtight container. Keep the dressing in a separate container until ready to enjoy.
The berries will go bad the quickest, so it’s best to keep those off until the very end if you can. However, if you wash and pre-cut the berries they should last a day or two in the fridge, if needed.

Ingredients
- 1-2 cups leftover cooked turkey or chicken, shredded
- 3-4 cups baby spinach
- 1/2 cup crumbled feta cheese
- 2-3 slices cooked bacon, crumbled
- 1-2 jalapeños, chopped
- 2 hard boiled eggs, chopped
- handful of pecans or walnuts
- 5-6 strawberries, sliced
- White Balsamic Vinaigrette (homemade or store bought)
Instructions
Layer it all in your bowl & dig in!
Notes
This salad comes together quickly using already prepared ingredients. Great for using up leftovers or making a day in advance for an easy dinner or to-go lunch.
