Strawberry Valentine Cookies
These Strawberry Valentine Cookies are an easy cake mix cookie that has a beautiful pink color, a light strawberry flavor, and some colored valentine M&M candies. They take no time at all and can be made a several days in advance.
We don’t go overboard for Valentine’s Day, but I do enjoy making a few simple treats for my family during the first part of February. I do love the bright colors that Valentine’s Day brings into our life.
Strawberry Cake Mix Cookies
The strawberry cake mix makes these cookies a hit. Strawberry flavored cookies are not a traditional cookie flavor in my house, but everyone loved them.
Recently, instead of just mixing in tons of chocolate candies, I’ve been placing a few right on top of my cookie dough balls. I just gently press the candies in half way (the candies will stick out of the cookie dough) and then bake. As the cookies the spread the candies will bake into the top of the cookies so beautifully.
Each cookie ends up with the same amount of chocolate candy as if I had mixed them into the dough; however, they look so much prettier after baking. Add as many candies as you like, but I think 5-6 candies is the perfect amount for each cookie.
How To Make Cookies From Cake Mix
Keep cake mix cookies soft by not overbaking them. This is true for any cookie actually. When baking, remove the cookies from the oven while the center is soft, but the edges are set.
Cake Mix cookies usually don’t last long in my house, but they can be stored in an airtight container for about a week if needed.
Cake Mix Cookie Recipe with Oil
These valentine cake mix cookies call for oil. You can use vegetable or canola, but stay away from any oil that has a strong flavor like olive or avocado. I’ve even tried coconut oil with success. You can make cake mix cookies with softened butter, but I prefer the texture of these cookies the best when made with oil.
Can Cake Mix Cookies be Frozen?
Cake mix cookies, including this Valentine cookie, can totally be frozen for up to 3 months. Here’s how I do it….
- Prepare dough per instructions.
- Roll dough into balls and place on cookie sheet. {Note: you can put a ton on the sheet since you won’t need room for them to spread}.
- Place cookie sheet in freezer for at least 1 hour or until cookie dough balls have frozen solid.
- Carefully take frozen cookie dough balls off of cookie sheet and place in freezer zip top bag. Label bag with date and baking instructions.
- When ready to bake… place frozen cookie dough balls on cookie sheet {this time allow room for them to spread when baking}, and set aside to come to room temperature. {about 20-30 minutes}
- Once they are thawed, bake as normal per original recipe instructions.

Strawberry Valentine Cookies

Ingredients
- 1 box strawberry cake mix (dry)
- 2 eggs
- 1/3 cup of oil
- 1/2 cup Valentine M&Ms
Instructions
Preheat the oven to 375 degrees and spray a sheet pan with non stick cooking spray.
Combine cake mix, eggs, and oil in a large bowl. Batter will be thick. Spoon into small balls, place on cookie sheets leaving about 2 inches between cookies, gently press 4-5 M&Ms partially into the top of each dough ball.
Bake for 8 to 10 minutes until cookies brown slightly on the edges.
