I love taking my family’s favorite recipes and transforming into something allergy friendly that I can enjoy. This Strawberry Vanilla Poke Cake is fun and flavorful, but it’s super easy, gluten free, dairy free, and vegan! Trust me…it’s scrumptious!
A couple weeks ago I attend Gluten Free and Allergy Expo in Phoenix and met the wonderful woman behind the Vivian’s Live Again brand of gluten free (and most are dairy free) products. She ended up giving me some of everything to bring home and play with and I just new that the first thing I wanted to make was a poke cake.
Poke cakes are usually made with a whipped cream topping, but that’s not always easy to do with no wheat, no dairy, and no eggs. So for me, finding a quick and easy stand by made me jump for joy! On an even better note..it’s tastes amazing! My kids had no idea that it was dairy free and kept eating it until I yelled {yelled nicely…I promise} that it was for mommy and to put it down.
When was the last time you made a poke cake with a whipped topping? You have to give this one a try. It’s perfect for a Valentine’s Recipe or a Summer Dessert!
For this recipe I used:
Vivian’s Live Again Whipped Topping
GF Betty Crocker Yellow Cake Mix OR Homemade White Cake
Strawberry Vegan “Jello”
Ener-G Egg Replacer
Valentine’s Sprinkles
Strawberry Vanilla Poke Cake
This Strawberry Vanilla Poke Cake is fun and flavorful, but it's super easy, gluten free, dairy free, and vegan! Trust me...it's scrumptious!
Ingredients
- 1 GF yellow or white cake mix, prepared as directed or with dairy-free subs
- small box strawberry "jello" (I used a vegan brand)
- whipped topping, such as Vivian's Live Again
- red and pink sprinkles
Instructions
- Preheat oven according to recipe instructions. Prepare a 9x9 pan with non stick cooking spray and set aside.
- Bake cake according to recipe instructions. When fully baked, remove from oven, let it cool 5-10 minutes, then poke holes all over cake using a straw or the end of a wooden spoon (20-30 holes is great).
- Prepare gelatin according to package, but instead of pouring into cups and chilling, pour over cake and into holes. Cover with plastic wrap and place in the fridge to chill for several hours and let the gelatin set.
- Prepare whipped topping according to package instructions and spread over the top of the cake and then top with sprinkles.
- Store in fridge and enjoy!

I followed your directions, using vegan strawberry jello mix, and the gelatin never set. It just soaked in the cake an I was left with mush. Any ideas? Are you sure I did not need to cool the cake completely first?

That’s very odd. What brand “jello” did you use? And did you put it in the fridge to cool after adding the jello? Let me know how you prepared everything so I can help troubleshoot. w-
