The temperatures are quickly rising here in Phoenix and we’ve almost had our first triple digit temperature. Once it’s over 100F, all bets are off for a normal supper. Not only is it too hot to even think about eating, but it’s too hot to cook. I dread heating up the kitchen by using my oven, stove, and yes even my slow cooker heats up the kitchen. So in the summer, we have a lot of salads, grilled foods, and smoothies. A good smoothie, like these tropical smoothies with chia seeds, are perfectly acceptable for supper.
My policy is any smoothie that has no added sweetener and includes lots of fiber is a nice light meal for meal. This smoothie tastes like it is straight from the tropics with the pineapple and mango. The little bit of lime really brightens up the flavors too. Smoothies are the perfect 15 minute supper…if only the kids counted it as supper too!

I’ve had chia seeds in yogurt with a granola-type topping, but never in a smoothie. I’ve got to give this a try!

What are chia seeds like? I’ve never had them. This looks pretty refreshing, though. I bet my kids would even love them enough to not leave me any!

Ditto for me – I don’t know what chia seeds are or where to get them! I do like the idea of smoothies for dinner though. It gets super hot where I live, too, and the idea of turning on the oven in the summer is unbearable.
